Bread Salad

Udi's now makes french bread which would probably go great with this recipe. This is from Mom's again.

1 baguette
3 roma tomatoes, seeded
1/2 cup manchego cheese
Desert Pepper Salsa del Rio
Cilantro
a drizzle of olive oil
